INGREDIENTS

  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • salt Pinch
  • pepper Pinch
  • 1 cucumber peeled, fork-scored, and thinly sliced, then diced
  • 1 1/2 cup cherry tomatoes cut into quarters
  • 8 oz fresh mozzarella
  • 1/2 large red onion chopped into small pieces

INSTRUCTIONS

  1. 1 In a small bowl, whisk together olive oil, balsamic vinegar, oregano, basil, salt, and pepper to make the dressing.
  2. 2 Prepare the vegetables: Peel, fork-score, thinly slice, and dice the cucumber. Quarter the cherry tomatoes. Chop the red onion into small pieces. Cube the fresh mozzarella.
  3. 3 In a large bowl, combine the diced cucumber, quartered cherry tomatoes, chopped red onion, and cubed mozzarella.
  4. 4 Drizzle the dressing over the salad and gently toss to combine. Serve immediately or chill for a refreshing summer side.
